Ice is essential for cocktails, nevertheless there's an entire class of cocktails called Scaffa. These cocktails are served at room temperature — without cooling or watering down (although water is sometimes added). I make four classic and contemporary Scaffa cocktails and try to find out if it's worth it.

Ingredients

Brandy Scaffa

  • 1 ½ oz. / 45 ml Brandy
  • ¾ oz. / 22 ml Maraschino liqueur
  • 1 dash Angostura bitters
  • Garnish with Orange peel

Room Temperature Manhattan

  • 2 oz. / 60 ml Rye whiskey or Bourbon
  • 1 oz. / 30 ml Sweet Vermouth
  • ¾ oz. / 22 ml Water
  • 3 dashes Angostura bitters
  • Cocktail cherry for garnish

The Warm Pilgrim

  • 2 oz. / 60 ml Bourbon
  • 1 barspoon Maraschino liqueur
  • 1 barspoon Cranberry juice
  • 1 Cinnamon stick
  • 1 dash Orange bitters

How do I compare

  • ¾ oz. / 22 ml Calvados / Apple brandy
  • ¾ oz. / 22 ml Bourbon
  • ⅓ oz. / 10 ml Benedictine liqueur
  • ½ oz. / 15 ml Triple Sec
  • 2 dashes Apple bitters
  • Garnish with Orange peel
