Bacon Jam at home with this easy step-by-step recipe! Perfectly balanced with sweet, savory, and smoky flavors, this bacon jam is made with smoked bacon, bourbon, maple syrup, and a hint of spice. It’s the ultimate spread for toasts, crackers, burgers, or even as a dip for chips. Plus, I’ll show you how to pair it with two delicious cocktails: Fall from the Tree and Applejack Rabbit.

Ingredients

  • 400 grams Smoked Bacon
  • 250 grams Shallot (or regular yellow onion)
  • 2 cloves Garlic
  • ½ teaspoon Cayenne pepper
  • ¼ teaspoon Smoked Paprika
  • 2 oz. / 60 ml Bourbon or Tennessee whiskey
  • 2 oz. / 60 ml Maple syrup
  • ½ cup / 60 grams Sugar (white or Muscovado)
  • 1 oz. / 30 ml Apple cider vinegar 5%

Recipe

  • Finely chop the bacon and fry over medium heat until all the fat is rendered and the bacon is cooked through (about 20 minutes). Transfer the bacon to paper towels to soak up the fat.
  • Dice the onions, fry in a small amount of leftover bacon fat (pour the rest out) until they begin to caramelize. Add the minced garlic and fry for another 1 minute.
  • Add the cayenne and smoked paprika and stir.
  • Increase the temperature, pour bourbon and maple syrup into onions and fry/boil stirring constantly for 2-3 minutes.
  • Add apple cider vinegar and sugar, stir and fry for additional 2-3 minutes.
  • Chop the slightly cooled bacon finely, add to the onions/spices and fry for another 10 minutes until the mixture becomes more viscous and jam-like.
  • Transfer to jars and place in the fridge for storage.
  • Eat at room temperature on a burger, a slice of toasted bread or a cracker. Also good with chips. It's delicious!
