Beer is much older than civilization, but why did humans start making it? From prehistoric fermentation to Sumerian beer culture, this is the surprisingly strange story of how beer changed humanity.

- Yeast has been producing alcohol for millions of years. Ethanol naturally appeared whenever microorganisms processed sugar. Our ancestors must have encountered it in overripe fruit. There's even the "drunken monkey" hypothesis: the smell of ethanol may have helped primates find fruit that was already rich in sugar. So alcohol probably wasn't invented by anyone. People first noticed it. Then they learned how to make it on purpose.
- One of the oldest pieces of evidence for a grain-based fermented drink was discovered in Raqefet Cave in what is now Israel. It's around 13,000 years old and is associated with Natufian hunter-gatherers. About 9,000 years ago, people in Jiahu, China, were already making a fermented drink from rice, honey, and fruit.
- A few thousand years later, alcohol becomes part of something completely new: civilization. In Mesopotamia, beer was already being produced on a massive scale. It was recorded on tablets, handed out as rations, used in religious rituals, and carefully accounted for. There was even a goddess of beer, Ninkasi, and a hymn dedicated to her. And this is where things get really interesting.
- Beer was no longer just a drink. It was grain that had to be grown. It had to be harvested, stored, processed, and distributed. Production had to be recorded. Supplies had to be controlled. And that meant warehouses, accounting, rations, and taxes started to appear. Beer became part of the very system that eventually grew into the state.
- So the question "what came first, civilization or beer?" isn't quite as stupid as it sounds. There's even a hypothesis that the need for grain for beer and large communal feasts may have helped encourage people to start cultivating it. We can't prove that beer was what drove humans to agriculture. But we can say one thing with certainty: alcohol existed long before civilization.
- And beer became one of the products around which civilization learned to organize production, storage, and people.
