Cocktail cherries (aka Maraschino cherries) are a classic garnish for cocktails and desserts, but what is sold in stores is usually soaked in various chemicals and can't even be called a cherry. I made Maraschino cherries at home, and the recipe turned out to be obscenely simple.

Ingredients

  • 400-600 grams Frozen pitted cherries
  • 5 oz. / 150 ml Water
  • 200 grams Sugar
  • 1 Cinnamon stick
  • 2 Star anise fruits
  • 2 Cloves
  • 3-4 oz. / 90-120 ml Rum or Brandy

Recipe

Tom Collins

  • 2 oz. / 60 ml London dry Gin
  • ¾ oz. / 22 ml Lemon juice
  • ½ oz. / 15 ml Simple syrup
  • Top up with Club soda
  • Garnish with a Lemon wheel and our homemade Maraschino cherry
