Let's go back to the USSR as we transform iconic Soviet lemonades like Dyushes, Tarkhun, Baikal, Barberry, and Cream Soda into delicious and unique cocktails in this second dispatch of our Soviet cocktail saga. I'll show you how to mix drinks brimming with soul and spirit, not just sugar and chemicals.

Ingredients

Duchess Delight

  • 1½ oz. / 45 ml Gin (floral or regular London Dry)
  • ½ oz. / 15 ml Elderflower Liqueur
  • ¾ oz. / 22 ml Grapefruit Juice
  • Top up with 1–2 oz. / 30–60 ml Duchess soda
  • Garnish with a Grapefruit slice
  • Shake, Coupe glass

Tarragon Gin Fizz

  • 1½ oz. / 45 ml Gin
  • ¾ oz. / 22 ml Lemon Juice
  • ½ oz. / 15 ml Simple Syrup
  • ¼ oz. / 7 ml Elderflower Liqueur (optional)
  • Top up with 2-3 oz. / 60-90 ml of Tarkhun soda
  • Garnish with a Tarragon or Rosemary sprig and a Lemon peel
  • Highball glass with ice

Baikal Rum Fashioned

  • 1½ oz. / 45 ml Dark Rum
  • ¾ oz. / 22 ml Sweet Vermouth
  • ½ oz. / 15 ml Fresh Orange Juice (strained)
  • 1 dash Orange Bitters
  • Top with Baikal soda
  • Garnish with an Orange peel and a Rosemary sprig
  • Stir, Old fashioned glass with ice

Barberry Margarita

  • 1½ oz. / 45 ml Blanco Tequila
  • ½ oz. / 15 ml Triple Sec
  • ¾ oz. / 22 ml Lime Juice
  • Jalapeno slices (muddle) or 1-2 dashes of Hot sauce
  • Top with Barberry soda
  • Garnish with a Lime wheel
  • Shake, Highball glass with ice

Cream Soda Colada

  • 1 ½ oz. / 45 ml White Rum
  • ½ oz. / 15 ml Homemade Cream of Coconut (not coconut cream)
  • ¾ oz. / 22 ml Pineapple Juice
  • Top with ~3 oz. / 90 ml of Cream Soda
  • Garnish with a homemade cocktail cherry
  • Add a little maraschino cherry liquid (optional)
  • Shake, Highball glass with ice
